Mermaid Toast
Ingredients
- 1 Purple or Teal food coloring
- 4 pieces of your Favorite Bread, toasted
- 8 oz. Cream Cheese, softened
- Sliced Banana
- Coconut Flakes or Edible Gold Flakes
Directions
Toast 4 pieces of bread. Split cream cheese in half. Mix a drop or 2 of food coloring to 1 batch of cream cheese. Put white cream cheese in piping bag and purple cream cheese in another. Pipe small dots in a row, alternating colors. Give each one a smear with a flat spatula. Sprinkle part of the toast with coconut flakes. Top with a few halved slices of banana. Enjoy!
Crab Cake Eggs Benedict
Ingredients
Hollandaise Sauce
- 3 egg yolks
- 1/4 tsp Dijon mustard
- 1 tbsp lemon juice
- dash of cayenne pepper
- 1/2 cup butter
Directions
- Combine egg yolks, mustard, lemon juice, and cayenne pepper in blender. Cover. Pulse til combined. Set aside.
- Melt butter in glass bowl in microwave. With blender on high, slowly pour in butter. It will start to thicken. Keep adding melted butter to yolk mixture. Turn off blender and set aside.
Additional Ingredients
- 4 crab cakes (store-bought)
- 4 eggs
- salt and cracked pepper to taste
- arugula for garnish
Directions
- On medium high heat, heat crab cakes til warm & crispy.
- Bring a small pot of water to boil, reduce to simmer. Poach eggs in water for 3-4 minutes.
- Arrange crab cake on plate, gently place one poached egg on top, and season with salt and pepper.
- Drizzle hollandaise sauce over the stacks, garnish with arugula, and a touch more cracked black pepper. Serve immediately. Delish!

- Champagne or Sparkling Wine
- Fruit Juices: Orange, Peach, Guava-Pineapple, Mango, etc.
- Assorted Fruits, sliced/cut bite-sized: Strawberries, Pineapple, Mango, Peaches, etc.
Directions:
